About the Place
The Gleba baking facility is located in Alcântara and serves as the main production centre, integrated into its original bakery. Since 2016, the entire bread-making process has taken place there, in keeping with the brand’s values – from milling 100% locally sourced grains daily using stone mills, to slow natural fermentation and baking. Although the factory has been expanded to meet demand, it retains an artisanal approach. It is not a traditional industrial factory, but rather a centralised artisanal production facility that supplies the various shops on a daily basis.
